My First Recipe !!!!

From the time i have been blogging, i have had a surreal kind of interest in the food blogs that do the rounds. I am a regular visitor at many such blog spaces and religiously try out the recipes.I am not as such a great cook, but it definitely interests me and acts as a stress buster. So i thought of posting the first ever recipe on the blog. And it’s “BHARWA  KARELA or STUFFED BITTER-GOURD”. Its one of my all time favorite vegetable as well as a recipe that has never gone wrong.

 

Ingredients:

  1. 4-5 small sized bitter-gourds
  2. 2 big sized onions
  3. Half a cup fresh coconut grated
  4. 1/2 inch ginger grated
  5. 6-7 cloves of garlic finely chopped
  6. Coriander
  7. Oil for frying
  8. salt
  9. 1 teaspoon tamarind pulp or amchoor powder
  10. Pinch of Sugar
  11. Mustard seeds
  12. Kalonji
  13. Saunf or fennel
  14. Asafoetida
  15. Red chilli powder
  16. Dhaniya powder

 

Method:

Scrap the outer covering of bitter -gourds and then boil the same (1 whistle) in the pressure cooker. Remove seeds by slitting in the middle and keep aside.

Now for the stuffing , add oil in the pan, add mustard, kalonji, fennel seeds, and asafoetida. Now add ginger and garlic to it . Once the garlic turns pink add onions and fry till they turn translucent.

Add red chilli & dhaniya powder to it and subsequently add the scrapped coconut, coriander and salt.  Fry for some time, but not much as the masala might burn.

Put it off from the flame and let it cool down a bit. Stuff the karela using this mixture and if you want you can bind the karela using a thread. Now add a little oil in a non stick fry pan , enough to shallow fry the karelas, put the stuffed karelas , sprinkle a bit of salt and cover with a lid.

It won’t take much time for the vegetable to get cooked , as we have already boiled them. Just check the karelas after 3-4 min and switch off the flame once done. Serve with fresh coriander and lots of love. !!!! 🙂

      I am a big fan of Karela.. I can make at least 5-6 types of it. Boasting my culinary skills .. lolzz.
